Modelling a Traceability System for a Food Supply Chain: Standards, Technologies and Software Tools

Abstract

The aim of this article is to define the state of the art of the international regulatory framework for the food industry, standards, technologies and software utilized for modelling the food supply chain, analyzing for them the advantages and the disadvantages. Traceability systems can help to know food origin and monitor means of transport and distribution, create ?hallmarks? and improve commercial potential (external o supply chain traceability). On the other hand, for a single company, there are many advantages in adopting a traceability system such as avoiding food adulteration, improving control systems, guaranteeing high levels of quality, increasing health and safety using transparency during the entire process chain.
